Maple Bacon Carrots 

Maple Bacon Carrots are a sweet and savory side dish that elevates the humble carrot to new heights. The combination of crispy bacon, caramelized maple syrup, and fresh thyme brings out the natural sweetness of the carrots, creating a flavorful contrast that is irresistible.

Ingredients:

  • 1 lb baby carrots, peeled
  • 4 slices bacon, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove from the skillet and set aside, leaving the bacon grease in the pan.
  3. Add the baby carrots to the skillet with the bacon grease. Cook over medium heat, stirring occasionally, for 4-5 minutes, until the carrots start to brown slightly.
  4. Drizzle the maple syrup over the carrots and stir to coat them evenly. Add the thyme, salt, and pepper, and continue to cook for another 2-3 minutes until the carrots are tender and glazed with the syrup.
  5. Transfer the maple bacon carrots to the prepared baking sheet and roast in the preheated oven for 12-15 minutes, or until the carrots are fork-tender and caramelized.
  6. Once done, remove from the oven and sprinkle the cooked bacon bits over the top. Serve hot as a side dish and enjoy!
